Treat Night

After a tough week we decided to sit down and relax in front of the television. As I have been so good and not been shopping all week there were no treats to be had and I really thought that we deserved them.
So a rummage through the fridge showed me a tub of good margarine well past it's sell by date and I immediately thought of Fairy Cakes (like you do!!). Half an hour later we had a plate of Butterfly Cakes, it brought back many happy memories of making them for my sons when they were little too.
Lovely Hubby approved and got stuck in, we also dug deep in the cupboard and pulled out some of our homemade Damson gin which, when diluted with the last of the lemonade went down a treat. In fact we were both fast asleep cuddled up on the sofa by ten o'clock. What a lovely relaxing end to a stressful week.
Butterfly Cakes
4oz SR flour
4oz Caster Sugar
4oz marg or butter
tsp of Vanilla Extract
2 Eggs
Mix all the above together in a bowl and beat until light and fluffy. Put good dollops into 12 cake cases and bake for 25 minutes.
While they cook make the icing. Simply beat together 2oz marg or butter with 4oz Icing Sugar and half a tsp of Vanilla Extract.
When the cakes are cool, slice off the tops and cut each slice in half to make the 'wings' spoon the icing into the dip and position the wings, lightly dust with Icing Sugar and as Raymond Blanc would say 'Voila'.
We were very good and only ate half of them last night, so we have more treats tonight!!

  6. I tried making cakes! I used a packet mix from approved food but added too much water! they over flowed out of the bun cases and splodged onto the bottom of the oven, i now have to scrape out the oven and feed dearly beloved the buns in the dark so he can't see that they look like biscuits!
