Courgettes - Marrows

I keep turning my back for what seems like minutes and my lovely little Courgettes turn into Marrows.

I've spiralized them ....

... I've cooked them simply with other veggies in butter.

I've also been adding them to stews, soups, Nutriblasts, and if all else fails the chickens get an occasional treat.  Nothing is wasted and we are making the most of all the harvests.

Oh, and I have them in the freezer, simply sliced, open frozen and then tipped into freezer bags ready for when the supply dries up and we are starting to miss them ... although I think that will be quite a while down the line  ;-)

  1. Oh, you people who brag about your courgettes! I must the only
person on earth who can't grow them. Every year I put them in
and every year I get nothing but leaves. It's almost spring again -
soon we begin our yearly battle!

    1. Feed the ground well, nurture the flowers ... you need male and female flowers to get the fruits, and if all else fails at least they are cheap in the shops when they are in season :-)

  2. I spiralize them then stir fry in a drop of sesame oil and season with 'salt and pepper' seasoning from our local Chinese supermarket, delicious!
We also use them a lot as courgetti noodles with bolognese etc.

  3. I've had cricket ball courgettes the size of footballs after all this rain! For me, it's curry, more curry, courgette cake and freeze the rest! Great crop! Katie x

  4. We've got courgettes coming out of our ears. They're just about the only veg in the garden that have done well this year. Trouble is that we're not too keen, find them a bit tasteless and just bland. Need to find a way of making them tasty. Usually resort to adding to stews or just freezing them while I think what I can do with them all.

  5. The veggies look really wonderful, and good for you for having so many uses for them. Ever try cooking them with tomatoes? Yummy.

  6. We love courgette soup, even my husband who usually thinks courgettes are pointless. It uses a lot of courgette. Melt lots of butter, add grated courgette or marrow (I'd peel marrows if the skin is tough) season and cook gently until soft with lots of liquid. Blend, check seasoning, add a little grated nutmeg and serve. It's delicious- it tastes as though it has cream in it. Don't be tempted to add garlic, cheese triangles or anything else you find in courgette soup recipes :)

  8. Usually I have a glut of zucchini each year but not this year. I planted 4 zucchini plants and I have one tiny zucchini just showing itself. Lots of flowers but all male. I also planted 6 patty pan squash and i got 2 little patty pans. Very disappointing! The beans certainly made up for them though. I have LOTS of green and yellow bush beans. The tomatoes are crap this year too. Oh well, there's always next year!!

  9. I was gifted with a giant one, about 3 lbs! so I split it and stuffed it, using the same stuffing as I would for stuffed peppers. I roasted it first and drained off the liquid, then added the filling and warmed it through.
