Making Good Use of the Things That You Find

 
 
Nope I've not turned into a Womble - honest!!
 
I decided to see how many meals I could make from the last of the looking sorry for themselves veggies in the fridge drawer.
 
 
 
 
The last of the lettuce was mixed with the largest of the carrots, grated and a few slices of red onion to make a coleslaw, we still have lots of Ceasar Salad dressings that got from Approved Foods (3 for £1), so some of that was added just before serving.  We had this with homemade quiche for tea.
 
I chopped the salady bits into a bowl (giving the softest of the cucumber to the chickens, they love it) and mixed them together. Lovely Hubby took about a third of this to work with a leftover slice of quiche for his lunch yesterday. The other two thirds will have some cooked pasta stirred through and be the basis for tonights tea.
 
 
 
 
All that's left now is the celery a few of the cherry tomatoes and the little piece of red onion that I cut into.   The celery is still lovely and fresh, I always find if you keep it wrapped in the fridge drawer it will last for weeks, if I think it's looking a bit sorry for itself I usually turn it into THIS
 
 
 
Looking in the cupboard I found these sorry looking specimens, I have no idea how long they have been there but they were soft enough to cuddle :-)
 
 
 
I used the best two for my lunch, with a pat of butter and a sprinkling of grated cheese they were totally yummy.  This is a side plate by the way the two potatoes I chose were the smallest!
 
 
 
The rest were peeled (the skins were too far gone to leave on or even to use for potato peeling soup) and sliced into smallish wedges and open frozen for a couple of hours ...
 
 
 
 
... before being bagged up ready to be used as homemade wedges.
 
I usually cook these from frozen for five minutes in boiling water, and then drain and sprinkle with sea salt and paprika, before popping into a hot oven for around 30 minutes.
 
So nothing was wasted from what I found.  The apples in the other fridge drawer are going to be sliced up and turned into a lovely crumble for the weekend and then that will be the last of the fresh fruit.

The weekend is almost upon us and today the sun is shining, fingers crossed for a lovely weekend, who knows I may even get some seed sowing in the greenhouse done, a lovely thought.

  2. Ha ha - as soon as I saw the subject of this post I though "I know where that one came from" as I spotted that post over at SFT's blog this morning! I probably need to sort our fridge out actually...it's in a bit of disarray at the moment!

    1. I confess it was Sue that made me turn my attention to all the little bits and bobs we have squirreled away in our freezer. She is an expert at using up and has provided me with some great ideas for my challenge.

  5. You are such a great teacher Sue. I never thought about freezing wedges. Mr Sft loves them! Do you do anything to them first?

    I have used up the Stilton today. The first thing from the freezer is gone!

  6. No I just slice and peel, usually I leave the skins on too and just give them a good wash, but as you can see potatoes were just too far gone !!

    You CAN blanch them in boiling water for 5 mins or so and cool quickly, this also cuts the time they need in the oven. Sprinkle any spices or herbs on them whilst still slightly warm and they stick to the potato better.

    To cook simply drizzle over a bit of oil and some sea salt, these would be great to cook in your top oven, and make sure you turn them over half way through cooking time......now you've got me hungry :-)

    1. Thanks Sue. I passed this onto Mr Sft and he looked interested. Sometimes he gets home late and although wedges are quick, this will make them even quicker. No potatoes will go to waste in this house.
