Four Potatoes and Three Fishes - Meals 1 and 2

 
 
Four potatoes and three fishes....well three small salmon fillets really, these are the basis of my challenge to myself this week to make my £2 Housekeeping Challenge go as far as possible.  So how many meals or parts of meals can I make from these 7 items.  There were some brilliant suggestions in the comments section yesterday - thank you.
 
 
 
 
Most of them incorporated the two ingredients together and I may just do that for one of the meals at least, but my main aim is to use these ingredients to make good use of all the store cupboard and freezer things that I have in at the moment and to provide as much variety as possible so for the most part I will be using them individually.
 
 
 
First I had plans for one of the potatoes, it was peeled and then chopped quite small to cook down into mash...
 
 
 
...ready to be used like this, with added red onion, sweetcorn, peas and Thai Red Curry Paste. 
 
 I had spotted a recipe on a Blogging Buddy Jacqueline's Tinned Tomatoes blog for 'Spicy Tattie Puffs'.  This Blog is always full of the most tasty vegetarian food all suitable for adults and lots of it brilliant for growing children too.  Just look at little Cooper to see how healthy children can be if they are brought up vegetarian.  Although her recipe called for 6 potatoes, I managed with just one and lots of extra veggies.
 
 
 
After 25 minutes in the oven they came out looking like this.
 
 
 
They made a wonderful lunch yesterday, served simply with a dollop of Mayo for me and Onion Marmalade for Lovely Hubby.  You can see how big they are as this is a dinner plate, so plenty big enough for lunch or supper.  One pasty was saved by LH to take for a mid morning snack today.  He always gets the munchies mid morning and these are so much healthier than something from the vending machine.
 
 
 
Spurred on by our tasty dinner I decided on using one of the Salmon Fillets for tea, although we had had pastry for lunch we both fancied a quiche for tea, so with the addition of some sliced up Broccoli (cooked in the hot potato water as I made the Tattie Puffs), a couple of our eggs and a ready made pastry case.....
 
 
 
... a quiche was quickly assembled. 
 
Unfortunately it was eaten before I remembered to take a photograph, so you will have to just look at this uncooked version.  It was even more colourful when cooked and the addition of the single Ginger and Salmon fillet was perfect, very spicy and very flavourful.
 
Today I have plans for another of the potatoes, watch this space soon for what I have in mind.
 
Tomorrow I have something very different to Blog about :-)

  3. It is amazing what you can do with just a few things isn't it. I recently set myself the task of getting two meals for two people from 4 chipolata sausages and then seeing how many meals I could get from one whole breast of chicken.

  7. Those look lovely! Suggestion: Salmon cooked and flaked into scrambled eggs? I do this with smoked salmon so hope it would work with fresh; Asda smartprice smoked salmon offcuts 120g (I think) for 99p; I stock up and freeze if reduced. There's enough salmon there for at least 4 lots of scrambled eggs...and you have plenty of eggs!

  8. This is like the Hugh Whittingstall's challenge using just three items. My daughter bought me the Cookbook for Christmas. I am sure you could do an ebook as your dishes look really good (although we are vegetarians and don't eat fish) but I am good at adapting things.
