Eggs is Eggs.......

Yesterdays Eggs

They say 'Eggs is eggs...', but when you have your own laying hens, especially if they are a mix of breeds, eggs are as individual as the ladies that lay them.

Everyday when we go to collect the eggs we are never sure of what we will find, if someones been a bit greedy with their food we find huge ones...
~
~
...if a new girl has come into lay we will find a tiny one.
~
~ We occasionally find one that has gone all wrong on it's way out, maybe the hen was disturbed mid lay or her calcium levels are slightly skew whiff. ~ ~ We usually find at least one Welsummer egg, gorgeously brown and speckled. ~ ~ All are brought in and treated with the same respect and consideration. ~ ~ The saleable ones all neatly boxed and dated ready for sale to our regular customer list or at the Farmers Market. ~ ~ Labeled with love. ~
~
Stored carefully in the fridge to keep them at a controlled temperature. The one thing an egg doesn't like is fluctuating temperatures. Keep them in your fridge or keep them at room temperature, whichever suits you best, just don't switch between one and the other.
~
And the unsaleable ones, the ones of wrinkly shell or extreme of size.......they're the best ones. We eat them....scrambled, soft-boiled, hard-boiled, used in cakes turned into lovely frugal meals, high in protein and delicious of taste. I love the unsaleable ones!

~ I have a little collection of egg cups just waiting to cuddle them! ~ Sue xx

  1. Even from our Warrens, we get a variety of eggs. We have one hen (still don't know which one) who lays eggs with very thin shells. We keep these for ourselves, as well as the ugly ones. They all tastes the same on the inside, but folks can be a bit choosy.

    Though we don't have chickens ourselves we get fresh eggs from my nephews chickens and they're amazing!

    I used to buy eggs from our local farm shop, wrinkly and odd in shape, labelled as mis-shapes and in a big tray, great price. But alas a nice man from Trading Standards said they cant sell the 'odd' shaped ones, or if they do they can only label them as 'pet food eggs' which is madness! Some of the big ones were often double yolkers!

  5. I had the first eggs of the year this week, so pleased I wont have to be buying any for a while and a rather delicious spot of scramble for my lunch today!

  6. Hey guess what - think I will be photographing some eggs myself tomorrow! Do I finally have some feathered friends...? No, sadly not. But I do have some pretty bunny-embroidered egg cosies that I need to get on the website.

    I shall be searching for the perfect eggs to model them - but doubt there will be much variety in my supermarket box :(

  7. Seeing your little yellow elephant one I have an exact one just in pink. I got it one Easter in the early 60's when we still lived in the UK I was about 6 then oh the memories!~
