Made soup and a quiche. Since the pot was brimming full of soup I really thought I'd get two meals worth out of it. Hubby surprised me by eating two very large servings....needless to say my potatoes only lasted one meal.<br /><br />I rarely peel potatoes, but did this time because I didn't like the texture of the peelings. Haven't tried it yet as usually they go on my compost. After reading this though, will have to give it a go!
