Either using the veggies as the stuffing with maybe some breadcrumbs or rice or something to thicken if too runny and then adding a tomato sauce and a sprinkle of cheese and or crumbs for a topping? Or stuffing with something else and using the roasted veggies as the sauce blitzing in the blender first.
