I...Here's my recipe for butternut squash curry. It's a winner with the vegetarian members of the family.<br /><br />1 onion, peeled and chopped<br />1 butternut squash, peeled, seeds removed, cut into cubes<br />1 medium sized potato, peeled and cubed<br />1 chilli, top cut off and slit (seeds left in)<br />Curry powder to suit (I use Kohinoor) <br />Clove of garlic, crushed, or finely chopped<br />Pinch of asafoetida (optional)<br />Can of coconut milk<br />Juice of a small lime<br /><br />The first time I made this, I found the potato took longer to cook than the squash, so I put the cubed potato in the microwave for 1-2 minutes before adding to the curry.<br /><br /><br />Fry the onion until translucent, then add the garlic and chilli, and fry for a further minute. (Leaving the chilli whole allows the flavour and heat out, without making the curry too hot.)<br />Add the curry powder and asafoetida and stir around for 1 minute. (Add a little water if the powder sticks to the base of the pan.)<br />Add the potato and squash.
